We love The Story of Peter Rabbit by Beatrix Potter. It isn't an Easter book, strictly speaking, but it is a fun and timeless story. We've enjoyed the version illustrated by Lisa McCue.
We also like Rechenka's Eggs by Patricia Polacco. It is an Easter book, set in Moscow. It involves a very special Easter-egg-laying goose and not a rabbit.
